Really Amazing Hummus

Ingredients
  

  • 1 can chick peas
  • 1 clove garlic fresh
  • 1-2 pieces roasted red peppers I use the jarred kind
  • 1 tbsp lemon juice fresh
  • 1/2 tsp salt
  • 2 tbsp olive oil extra virgin
  • 1/4 cup water
  • 1 dash paprika

Preparing the Chickpeas (optional)

  • Rinse the chickpeas in water using a colander
  • Gently remove the skins of the chickpeas and discard them. I find that rolling them between my fingers allows their outer shell to loosen. This takes a bit of time and it is optional, but if you have a little extra time, it makes a very creamy hummus.
    If you decide to use the dump and blend method skip to the next section: Adding in these ingredients without preparing the chickpeas will save you a lot of time if you decide to skip the chickpea preparation step. You'll still come out with great hummus!

Making the Hummus

  • Add the chickpeas to a food processor or a blender along with the garlic, roasted red peppers, salt and lemon juice. Blend until smooth. (I use a food processor, my dad swears by a Vitamix. Use what you have)
  • After the chickpea mix is blended, add in the water in small increments while the food processor is on. You can add more or less than what is in the ingredient list, but you are aiming for a texture similar to a peanut butter. That said, this is really where you can start to customize the texture.
  • Then, drizzle the olive oil while the food processor is running. You can save a bit for the top of your hummus to garnish it at the end.
  • Lastly, garnish with the remaining olive oil...or a little extra olive oil if you are like me. And sprinkle some paprika on top. Enjoy with veggies, pita chips, on a sandwich. Kids also love this, but mine don't love the garlic so omit that if you have picky-ish kids like I do.

Notes

If you want to try different ingredients than I used, you can take out the garlic and roasted red peppers and try something else.  In the past, I have added kale, roasted purple carrots, cauliflower, roasted onions.  Last year, we got several boxes from Misfits Market and I didn't know what to do with all of the vegetables so I got really creative.  There are so many cool things you can do with hummus that I'd encourage you to experiment.  The base ingredients of the hummus can stay the same and you'll still come out with a great outcome with other added ingredients.
This particular hummus recipe is my favorite.  My Mediterranean father is a purist and laughs at my additions of roasted red pepper and the removal of the skins of the chickpeas.  
This recipe can easily be doubled.  I do it all the time!
